Ingredients
- 1.5 - 2kg whole snapper
- 1 lemon
- 4 tbs Coast of Gold Shito Pepper Sauce
Directions
1. Heat BBQ or oven on medium heat.
2. On a baking tray, place your whole snapper. Prepare it by scoring both sides and marinate it with Shito medium pepper sauce, making sure you get the sauce generously into every incision. Add more Shito if needed.
3. Slice 1 lemon, place slices inside snapper and salt to taste. Place in the oven or BBQ and cook for 25-30 mins. Make sure BBQ is covered.
4. Check after 20-30 mins by lifting the incision of the snapper. If it lifts up easily, then it is ready. If you find some resistance leave covered for a further 2-3 mins.
5. Transfer to a plate, cover loosely with foil and rest for 3 mins before serving. Serve with seasonal fresh salads or hot chips.
