Ingredients
- 750g beef tri tips (or other steak cuts)
- 3 capsicums (red, yellow and/or green)
- 1 large red onion
- 1 cup water
- 16 small mushrooms
- 4 tbs Coast of Gold Suya Spice Rub
Directions
1. Cut beef into 3cm cubes, add to bowl and sprinkle 3tbs of Suya Spice Rub. Marinate for 1 - 24 hours (minimum 20 mins).
2. Cut capsicum and onion into 3cm squares and thread marinated beef and vegetables onto skewers. Use 2 pieces of veggies between each piece of meat.
3. In a small bowl, mix the remaining 1tbs of Suya Spice Rub in 2tbs of olive oil. Brush kebabs lightly with reserved marinade (including vegetables), then drizzle with olive oil.
4. Heat BBQ or large skillet over high heat. Add 1tbs of oil, then when smoking, cook kebabs in batches for 2 mins on each side until slightly charred, basting with reserved marinade as you go.
5. Transfer to a plate, cover loosely with foil and rest for 3 mins before serving.
