Ingredients
- 4 Silver Dory Fillets (skin on)
- 1 cup Black Rice
- Sea Salt
- Olive Oil
- 1 Tomato
- ½ Spanish Onion
- 1 Green Pear
- 1 Orange
- 1 Lemon (juice)
- ½ Bunch Coriander
- 1 cup Blackberries
- 2 tsp MILD Shito Pepper Sauce
Method
Rice:
- Rinse rice to remove starch, then add to a lidded saucepan with 1 ¾ cups water per cup of rice. Bring to a boil, reduce heat, cover, and simmer for 20-30 mins until water is absorbed.
- Let sit, covered, to steam. Fluff before serving.
Salsa:
- Wash blackberries and set aside.
- Quarter and deseed the tomato, then dice it with the onion and pear. Add to a bowl.
- Chop coriander, add to the bowl.
- Peel and segment the orange, add to the salsa, and squeeze in the juice.
- Add lemon juice and Shito sauce, toss gently.
- Add blackberries last to avoid bruising. Season with salt.
Dory:
- Salt the fish skin. Heat olive oil in a pan and cook fillets skin-side down for a few minutes, until edges lift. Flip and cook the flesh side briefly.
- Remove from heat and place on paper towels to absorb excess oil.
Plating:
- Serve black rice on plates, top with two fillets each, and spoon salsa over the fish.

- For a snack, top toasted sourdough or Turkish bread with salsa and balsamic glaze.
- For a sweeter salsa, swap blackberries and orange for mango and strawberries.
