Ingredients:
- Quinoa
- Spinach leaves
- Coriander (including stems)
- 4 tsp olive oil
- 1/2 lime (juiced)
- 1/2 lime
- 1 tsp hot Shito pepper sauce
- Salt (to taste)
- Avocado
- Crème fraîche (optional)
- Cooked meats (optional)
- Sundried tomatoes
(for serving)
Instructions:
- Cook Quinoa: Boil quinoa according to package instructions. Drain and set aside.
- Make Dressing: In a food processor, blend washed spinach and coriander with 4 tsp olive oil until smooth. Add 1/2 lime juice, 1 tsp Shito sauce, and salt. Blend again.
- Combine: Mix the cooked quinoa and spinach dressing. For best flavour, refrigerate overnight.
- Serve: On a large platter, create a bed of quinoa. Top with avocado, crème fraîche, and any meats if desired.
- Add Sundried Tomatoes a: Scatter sundried tomatoes over the salad just before serving.
- Finish Dressing: In a mason jar, mix 1 tsp Shito with 3 tbsp olive oil. Shake well and drizzle over the salad. Squeeze the remaining lime juice on top.
