Ingredients
- 2 x tablespoon of olive oil
- 1 x large red onion
- 3 x cups of Basmati rice (or if you want a really quick version, you can use a sachet of pre-cooked rice)
- 1 x cup of frozen mixed veg
- 1 x tablespoon of Suya Spice Rub
- Salt to taste
Method
1. Thinly slice your onion and set aside
2. Wash and drain your rice and set aside
3. Add a nonstick pan to a medium heat. Drizzle oil and add sliced onions. Cook on a medium heat for 10-15 minutes or until they start to caramalise. Turn the heat down to low
4. Add your washed rice. Stir through the caramalised onions, evenly coating the grains
5. Add 4.5 cups of water to the mixture and add salt to taste. Place a right lid on the pot and allow to cook for a further 25 minutes. Tip: you can stir the rice at 20 minutes through should you wish to ensure it's cooking evenly. Just try to avoid stirring the bottom of the pot
6. When the rice is cooked, add the frozen veg mix
7. Sprinkle on your Suya Spice Rub for the final Umami flavour of Rice Me Gorgeous
