Shito is Ghanaian. This is the sauce our family has argued over for years, made properly, in small batches, by hand in Australia.
The slow cook
Onion and garlic go in first and cook down slowly, until the natural sugars come out and take the sharp edge off the tomato paste. That is the sweet.
Then the garlic and ginger crisp. That is the smoky, and it is where the savoury depth and the texture come from, the reason a spoonful tastes of more than chilli.
Chilli goes in last, so the heat lifts everything underneath it rather than burying it. That is the spicy.
Old school, and it takes as long as it takes. You cannot rush the sugars out of an onion, and you can taste it when someone has tried.
How to use it
Spoon it over fried eggs. Stir it through rice or noodles. Spread it on a meat pie. Serve it beside anything off the grill, or straight onto roast vegetables. A teaspoon changes a plate, so start there and work up.

Is Shito a chilli crisp?
Yes. Shito is built the same way a chilli crisp is, aromatics fried in oil until crisp and then suspended in that oil, so it is spooned over food rather than poured. The difference is the origin and the flavour. Shito is Ghanaian, and Coast of Gold builds it on caramelised onion and tomato paste for a sweet, smoky, umami base that most chilli crisps do not have.
Is Hot Shito gluten free?
Yes. The soy in the recipe is tamari, brewed from soybeans without wheat, and the Worcestershire sauce is a gluten free grade. It does contain soy, so it is not suitable if you are avoiding soy.

What does Shito taste like?
