The slow cook
Onion and garlic cooked down slowly until the natural sugars come out and take the sharp edge off the tomato paste. Then garlic and ginger crisped for smoke and savoury depth. Then chilli, last, so heat lifts what is underneath rather than burying it.

Is Holy Shito much hotter than Hot?
Considerably. Hot is the top of the 190g range and you can spoon it freely. Holy Shito is a separate 40g jar built on scorpion chilli, and half a teaspoon is a serving.
Is Shito a chilli crisp?
Yes. Aromatics fried in oil until crisp and suspended in it, spooned over food rather than poured. Shito is the Ghanaian version, built on caramelised onion and tomato paste for a sweet, smoky base most chilli crisps do not have.
