The slow cook

Both sit on the same base. Onion and garlic cooked down slowly until the natural sugars come out and take the sharp edge off the tomato paste. Then garlic and ginger crisped for smoke and savoury depth. Then chilli, last. Only the chilli changes.

What is the difference between Hot and Holy Shito?

Hot is a 190g jar you can spoon freely over eggs, rice or anything grilled. Holy Shito is a 40g jar built on scorpion chilli powder at 4.8 per cent, where half a teaspoon is a serving. Two different products, not two sizes of the same thing.

Is this too hot as a gift?

Not if the person likes heat. The two Hot jars are entirely usable day to day, and the Holy Shito is the dare on top.
