Sweet. Smoky. Spicy. The one most people reach for, and the best place to start. A Ghanaian chilli crisp with the signature in balance, sweet up front, deep and smoky through the middle, then a spice that lifts a meal without taking it over.
Fried aromatics suspended in oil, spooned over food. Made properly, in small batches, by hand in Australia.
The slow cook
Onion and garlic go in first and cook down slowly, until the natural sugars come out and take the sharp edge off the tomato paste. That is the sweet.
Then the garlic and ginger crisp. That is the smoky, and it is where the savoury depth and the texture come from, the reason a spoonful tastes of more than chilli.
Chilli goes in last, so the heat lifts everything underneath it rather than burying it. That is the spicy.
Old school, and it takes as long as it takes. You cannot rush the sugars out of an onion, and you can taste it when someone has tried.
How to use it
Spoon it over fried eggs. Stir it through rice or noodles. Spread it on a meat pie. Serve it beside anything off the grill, or over hot chips. A teaspoon changes a plate.

Frequently asked questions
Is Shito a chilli crisp?
Yes. Shito is built the same way a chilli crisp is, aromatics fried in oil until crisp and then suspended in that oil, so it is spooned over food rather than poured. The difference is the origin and the flavour. Shito is Ghanaian, and Coast of Gold builds it on caramelised onion and tomato paste for a sweet, smoky, umami base that most chilli crisps do not have.
Is Medium Shito gluten free?
Yes. The soy in the recipe is tamari, brewed from soybeans without wheat, and the Worcestershire sauce is a gluten free grade. It does contain soy, so it is not suitable if you are avoiding soy.
What is Shito?
Shito is a Ghanaian pepper sauce, a dark, smoky West African condiment traditionally spooned over rice, grilled meat and eggs. Coast of Gold makes a gourmet version in Australia, sweet, smoky and spicy, from a family recipe with a modern twist. It comes in Mild, Medium and Hot.
Which heat should I start with?
Medium. It is the most popular jar for a reason, enough spice to be interesting and not so much that it takes over the plate. Move up to Hot once you know you want more, or down to Mild if you are feeding a whole table.
What does Shito taste like?
Sweet first, from onion and garlic caramelised slowly until the sugars come out. Then smoky and deeply savoury, from garlic and ginger cooked until crisp. Then the heat. Three distinct stages in one spoonful, which is what Sweet. Smoky. Spicy. actually describes.
How do you use Shito?
Spoon it over eggs, stir it through rice or noodles, spread it on a meat pie, or serve it beside anything off the grill. A little goes a long way.
