The slow cook

All three share the same base. Onion and garlic cooked down slowly until the natural sugars come out and take the sharp edge off the tomato paste. That is the sweet. Then garlic and ginger crisped, for smoke and savoury depth. Then chilli, last, so the heat lifts what is underneath rather than burying it.

Only the chilli changes between the three jars. Old school, and it takes as long as it takes.

What is the difference between Mild, Medium and Hot?

All three share the same slow cooked base and only the chilli changes. Mild is gentle and family friendly, Medium is the balanced crowd pleaser, and Hot is the boldest of the range and the best seller.

Is Shito a chilli crisp?

Yes. Aromatics fried in oil until crisp and suspended in it, spooned over food rather than poured. Shito is the Ghanaian version, built on caramelised onion and tomato paste for a sweet, smoky base most chilli crisps do not have.

Which should I open first?

Medium. It is the one most people settle on. Move up or down from there once you know.
