The slow cook

Underneath the heat is the same base as every jar we make. Onion and garlic cooked down slowly until the natural sugars come out and take the sharp edge off the tomato paste. Then garlic and ginger crisped for the smoke and the savoury depth. Then the chilli, last, so it lifts what is underneath instead of burying it.

That is why Holy Shito tastes of something other than pain. There is a real sauce under the scorpion chilli, and you can find it if you can hold on long enough.

How to use it

Half a teaspoon. Genuinely. Stir it through a bowl of noodles, drop it onto fried eggs, or add it to a marinade where it can spread out. Treat it as a heat source rather than a sauce and it will earn its place.

Frequently asked questions

Is Holy Shito gluten free?

Yes. Holy Shito is gluten free. The soy in the recipe is tamari, brewed from soybeans without wheat, and the Worcestershire sauce is a gluten free grade. It is also preservative free. It does contain soy, so it is not suitable if you are avoiding soy.

How hot is Holy Shito?

A full 10 out of 10 on the Coast of Gold scale. It is built on scorpion chilli powder at 4.8 per cent, one of the hottest chillies in the world, which puts it well above the Hot Shito Pepper Sauce. The sweet, smoky base is still there underneath.

Is Holy Shito hotter than Hot Shito Pepper Sauce?

Considerably. Hot is the top of the 190g range and carries a proper kick, but it is a sauce you can spoon freely. Holy Shito is a separate 40g jar built on scorpion chilli, and half a teaspoon is a serving. They are two different products.

Is Shito a chilli crisp?

Yes. Shito is built the same way a chilli crisp is, aromatics fried in oil until crisp and then suspended in that oil, so it is spooned over food rather than poured. The difference is the origin and the flavour. Shito is Ghanaian, and Coast of Gold builds it on caramelised onion and tomato paste for a sweet, smoky, umami base that most chilli crisps do not have.

How should I eat something this hot?

Start at half a teaspoon and spread it through the dish rather than eating it neat. Dairy helps more than water if you overshoot. It is meant to be enjoyed, not survived.
