Suya Cheese Clouds are a high protein, low carb snack made with four ingredients: egg whites, cheese, salt and Coast of Gold Suya BBQ spice rub. They bake in 15 minutes at 180°C and come out crisp on the outside and soft in the middle.
Think of them as cloud bread with a West African kick. Suya is the smoky, nutty spice rub sold at grill stalls across Ghana and Nigeria, and it turns a plain egg white snack into something you cannot stop eating. In our house they rarely make it off the board.
Ingredients (makes 8)
- 4 egg whites, at room temperature
- 50g grated mature cheddar or parmesan
- A pinch of salt
- 1 heaped teaspoon Coast of Gold Suya BBQ Spice Rub
Method
- Preheat the oven to 180°C and line a baking tray with baking parchment.
- Whisk the egg whites and salt in a clean, dry bowl until they form stiff peaks.
- Gently fold in the grated cheese, keeping as much air in as you can.
- Spoon eight mounds onto the tray, well spaced.
- Sprinkle the Suya over the top.
- Bake for 15 minutes until golden and crisp. Serve warm.
How much protein is in Suya Cheese Clouds?
About 13g of protein per serve of four clouds, with under 1g of carbohydrate. Almost all of it comes from the egg whites and cheese, so there is no protein powder involved.
Can I make them in an air fryer?
Yes. Line the basket with parchment, spoon in the mounds and cook at 160°C for 8 to 10 minutes until golden. Air fryers vary, so check them at 8 minutes.
Why did my cheese clouds go flat?
Usually a trace of yolk or grease in the bowl, which stops the whites reaching stiff peaks, or stirring the cheese in rather than folding. They also soften as they cool, so serve them straight from the oven.
What is Suya spice?
Suya is a West African spice rub built on roasted peanut, chilli and smoky spices, traditionally used on grilled meat. Coast of Gold Suya BBQ is plant based and, as this recipe shows, works well beyond the grill.
